The crunchy cauliflower tacos with mango salsa are full of flavor and texture. The cauliflower florets are baked until they are perfectly crispy, and they go perfectly with the cool mango salsa. Together, they make a very satisfying taco.
Ingredients:
- 1 medium cauliflower, cut into florets
- 1 cup all-purpose flour
- 1 cup plant-based milk
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup breadcrumbs
- 1 tablespoon olive oil
- 8 small tortillas, warmed
- 2 ripe mangos, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
- Optional toppings: shredded lettuce, sliced avocado, vegan sour cream
Instructions:
Preheat the oven to 400F 200C
In a bowl, whisk together flour, plant-based milk, garlic powder, smoked paprika, cumin, salt, and pepper to make a batter
Dip cauliflower florets into the batter, then coat them in breadcrumbs
Place cauliflower florets on a baking sheet lined with parchment paper
Drizzle with olive oil
Bake for 25-30 minutes or until cauliflower is crispy and golden brown
While the cauliflower bakes, prepare the mango salsa by combining diced mango, red onion, jalapeno, cilantro, lime juice, and salt in a bowl
Mix well
Warm tortillas according to package instructions
To assemble tacos, fill each tortilla with crispy cauliflower florets and top with mango salsa
Add optional toppings if desired
Serve immediately and enjoy!
